Most of us have been spending many more hours at home, and enjoying extra time in the kitchen. As we enter the holiday season, we, here in Wisconsin at least, see a drastic change in the weather. The cold, windy, dark days inspire many of us to make hearty, decadent soups and freshly baked bread.
This chicken and wild rice soup is “comfort in a bowl”. Rich and satisfying with its creamy flavorful broth, shredded chicken, and vegetables, you will ring the dinner bell and the whole family will come running.
Makes a generous family style pot of soup to serve 6-8 people. Also makes great leftovers.
You will need the following ingredients to make this recipe:
4 tablespoon butter, 1 to 1.25 pounds boneless skinless chicken thighs, 4 cups chicken broth, 3 cups water, 1 cup half and half.
In the kitchen, you’ll need a cutting board, stock pot with lid, measuring cups and a ladle.
